The collection of varietal grape juices

Alain Milliat is one of the few to offer a complete collection of single-varietal grape juices, made from emblematic varieties:

•    Chardonnay Blanc: floral and honeyed, with a nice acidity
•    Merlot Rouge: round, ample, with notes of black fruits
•    Sauvignon Blanc: fresh, herbal, slightly lemony
•    Cabernet Rosé: fruity, floral, very refreshing

Fresh or aged goat cheeses

Fresh, tangy, sometimes slightly herbal, they call for juices that are both lively and floral. To pair with:

•    Jus Raisin Blanc Sauvignon : lively, floral, slightly vegetal, it extends the goat cheese aromas without dominating them. Ideal for balancing a Crottin de Chavignol or an ash-covered goat cheese.
•    Jus Pomme Cox’s : with its elegant acidity, it is perfect for softer or semi-dry cheeses like fresh goat cheese.

Cooked pressed cheese (Comté, Beaufort, Gruyère)

Round, melting, and slightly nutty or fruity, these cheeses enjoy the richness and maturity of a well-interpreted fruit. To pair with:

•    Jus Raisin Merlot Rouge : round, ample, and fruity, it extends the richness of a 24-month Comté without overpowering its aromas.
•    Nectar Abricot Bergeron : indulgent, fleshy, its sweetness highlights the depth of a summer Beaufort.

Light, milky, very fresh, these cheeses pair well with fruity, floral, or zesty juices. To pair with:

Creamy, with a delicate bitterness depending on the aging, they call for freshness and sweetness. To pair with:

•    Chardonnay White Grape Juice: floral and honeyed, it brings elegance to a Brie de Meaux and refreshes the palate while enhancing the fat content of the cheese.
•    Reinette Apple Juice: slightly tangy, ideal for lightening a truffled brie.
