A citrus fruit like no other. Fragrant, complex, and unexpected: yuzu is undoubtedly one of the most fascinating citrus fruits in the world. Native to Asia, particularly Japan, this small yellow fruit with bumpy skin leaves no one indifferent.
Long reserved for gourmet cuisine or connoisseurs, it now appeals to a wider audience thanks to its vegetal freshness and delicate bitterness, halfway between lime, grapefruit, and mandarin. Yuzu: where does it come from?
Yuzu (Citrus junos) is an ancient citrus fruit grown primarily in Japan, Korea, and China. It is believed to have originated from a cross between a wild mandarin and an Ichang lemon. Highly resistant to cold, it grows slowly and is harvested in the fall, when its skin turns bright yellow and its fragrance reaches its peak.
In Japanese culture, yuzu is a precious ingredient, renowned for its extremely fragrant zest and tangy juice. Fresh, bitter, and lively: it intrigues as much as it seduces, and lends itself to subtle and unexpected pairings, whether in cooking, baking, or mixology. It is very often used in broths, sauces, and desserts.
What does yuzu taste like?
Imagine the scent of lemon, the roundness of mandarin, the freshness of grapefruit, and an almost minty touch: yuzu is all of these things at once. What makes it unique is its balance of acidity, bitterness, and freshness. It is almost never eaten fresh, as it has very little juice.
At Alain Milliat, we selected a high-altitude yuzu grown in the mountains of Kyushu, Japan, renowned for its aromatic intensity. This rare variety gives rise to a unique recipe, where the delicate bitterness of the fruit is enhanced by an infusion of gentian and bergamot.
