Yuzu: the Japanese citrus fruit that intrigues and awakens the senses
A citrus unlike any other. Fragrant, complex, unexpected: yuzu is undoubtedly one of the most fascinating citrus fruits in the world. Originating from Asia, particularly Japan, this small yellow fruit with a bumpy skin leaves no one indifferent.
Long reserved for gourmet cuisine or connoisseurs, it now appeals to a broader audience thanks to its vegetal freshness and delicate bitterness, sitting somewhere between lime, grapefruit, and mandarin. At Alain Milliat, we interpret it with rigor through three natural, elegant, and bold non-alcoholic creations.
Yuzu: Where does it come from?
Yuzu (citrus junos) is an ancient citrus fruit primarily cultivated in Japan, Korea, and China. It is believed to be a hybrid between a wild mandarin and an Ichang lemon. Very cold-resistant, it grows slowly and is harvested in the fall when its skin turns bright yellow and its fragrance reaches its peak.
In Japanese culture, yuzu is a precious ingredient, recognized for its extremely fragrant zest and tangy juice. Fresh, bitter, and vibrant: it intrigues as much as it delights, lending itself to subtle and unexpected pairings, whether in cooking, baking, or mixology. It is very often used in broths, sauces, and desserts.
What does yuzu taste like?
Imagine the scent of lemon, the roundness of mandarin, the freshness of grapefruit, and an almost menthol touch: yuzu is all of this at once. What makes it unique is its balance of acidity, bitterness, and freshness. It is rarely consumed as a fresh fruit, as it is very low in juice.
At Alain Milliat, we have selected a high-altitude yuzu grown in the mountains of Kyushu, Japan, known for its aromatic intensity. This rare variety gives rise to a unique recipe, where the delicate bitterness of the fruit is enhanced by an infusion of gentian and bergamot.

Three ways to enjoy yuzu with Alain Milliat
1. Organic Concentrate to Dilute – Yuzu
Made from pure yuzu juice, an infusion of gentian and bergamot, this organic concentrate offers a bitter, fresh, and aromatic profile. Just a few centiliters diluted in still or sparkling water or in a cocktail create a characterful, sophisticated, and natural drink.

2. Ready-to-Drink – Organic Yuzu (bottle)
A subtle and lightly sweetened refreshment (10.75 g of sugars and 48.75 kcal for 250 ml, which is 59% less sugar and 54% fewer calories than a regular soda), designed as an alternative to sodas… but with much more personality. Its secret: fine bubbles, freshness, and a slight zesty bitterness at the finish.
To be served very cold, as an aperitif, on the terrace, or to accompany iodine-rich or plant-based cuisine. It appeals to fans of tonic, citrus, or those looking for a characterful non-alcoholic alternative.
