The passion mousse recipe by Alain Milliat

Ingredients (for 6 people)

  • 120 g of Dilutable Concentrate – Organic Passion Fruit Alain Milliat
  • 20 cl of whole liquid cream (30% fat)
  • 50 g of sugar
  • 1 egg white
  • 2 g of food gelatin (1 sheet)

Preparation

  1. Rehydrate the gelatin in a bowl of cold water for 5 to 10 minutes.
  2. Gently heat half of the concentrate (60 g), then off the heat, add the squeezed gelatin. Mix well.
  3. Incorporate the rest of the concentrate (not heated) at room temperature.
  4. Whip the cream into soft peaks. In another bowl, whip the egg white until stiff. Gradually add the sugar.
  5. Once the concentrated mixture + gelatin has cooled, gently add the whipped cream, then the whipped egg whites.
  6. Pour into jars, and let set in the cold for at least 4 hours.

Why choose our Organic Dilutable Concentrate – Passion Fruit?

Derived from a carefully selected harvest of ripe fruits, with its slightly syrupy texture, our concentrate is an ideal ingredient for homemade desserts: mousse, panna cotta, entremets, or coulis. It restores all the aromatic, tangy, and floral richness of passion fruit. Discover the Dilutable Concentrate – Organic Passion Fruit

Variations and tips

  • Vegan version: replace the cream with a whipped plant-based alternative (like coconut) and the egg white with aquafaba (chickpea water) whipped.
  • Chic plating: add a crunchy topping (granola, sesame tuile, crumble) or a few passion fruit seeds as a finishing touch.
  • Other concentrates to try: our Dilutable Concentrate – Ginger, for a spicier version, or our Dilutable Concentrate – Yuzu, for a very fresh and slightly bitter dessert.
  • Pairing idea: serve the mousse with our Ready-to-Drink – Yuzu or a Mango Nectar, for an exotic and alcohol-free pairing.
