As Candlemas approaches, we suggest that you accompany your pancakes with an orange curd cream to spread without moderation! Orange Curd is a gourmet and tangy cream, easy to make with our Orange juice of Sicily.
This cream can also be used as a tart base or as a cream in desserts, for example! Its roundness and acidity will bring an original touch to your sweet creations.
ORANGE CURD
Whisk the egg yolks and powdered sugar together until the mixture whitens.
Add the cornstarch and whisk again.
Thin the preparation little by little with the Alain Milliat orange juice.
Place everything in a saucepan and cook over medium heat for about 5 minutes, until the cream thickens.
Remove from the heat, add the diced butter, then cover in film, i.e. by sticking the cling film to your orange curd to prevent a crust from forming.
Let cool to room temperature. It's ready !
This orange curd is easily made with other citrus juices such as our Mandarin, Clementine, Pink Grapefruit Juice or our Passion Fruit Nectar.
It keeps for several days in the fridge.
