Let’s continue with the great classics: discover the recipe for the famous Mexican cocktail “Le Paloma” enhanced by Alain Milliat pink grapefruit juice.

Cocktail Paloma au Jus Pamplemousse Alain Milliat

The recipe for our house cocktail:

The Dove

1/2 citron vert
1cl of simple syrup
4cl of tequila
6 cl of Alain Milliat grapefruit juice
Sparkling water
Fleur de sel
First, squeeze the lime juice. Then add the simple syrup, tequila and 4 cl of grapefruit juice. Shake it all up. Pour into a tall glass previously filled with ice cubes. Add the end of the grapefruit juice then top up with sparkling water.
At the time of training
Finish with a pinch of fleur de sel!

The history of the cocktail

The Paloma is the favorite cocktail of the Mexican population. It is part of the culture of the country! This most refreshing cocktail means “dove” in Spanish.
The Paloma cocktail owes its success to its unique taste due to the combination of the slight acidity of grapefruit and the sweet bitterness of distilled agave.
This cocktail would have been born in Mexico, from the creative spirit of the sommelier of the La Capilla restaurant.

As with every cocktail, there are many variations of the Paloma: 

  • The Paloma Papers is a slightly more complex and sophisticated version of the Paloma, we replace the sparkling water and the syrup with ginger ale in particular..
  • The Zorro cocktail, for alcohol lovers: a zest of tequila, triple sec, curaçao, grapefruit and a tonic.
  • Agrumes and Sunrise adds Cointreau and makes you feel like summer all year round!
