Candlemas: The Original Crêpe Recipe by Alain Milliat

Concentré au yuzu sans alcool, Alain Milliat

Ingredients for 4 people (about 10 pancakes)

Black sesame crepe batter

  • 200 g of wheat flour
  • 2 tbsp of ground black sesame seeds (or black sesame powder)
  • 2 eggs
  • 40 cl of milk
  • 20 g of melted butter
  • 2 tablespoons of sugar
  • 1 pinch of salt

Yuzu Compote

Preparation

1. Prepare the black sesame crepe batter

  • In a mixing bowl, combine the flour, ground black sesame seeds, sugar, and salt.
  • Add the eggs, then start mixing.
  • Gradually incorporate the milk while whisking to avoid lumps.
  • Add the melted butter and mix until you obtain a smooth dough.
  • Let the dough rest for 30 minutes for a lighter and fluffier texture.

2. Prepare the Yuzu compote

  • In a small saucepan, mix the apple pieces, the Concentrate to Dilute – Yuzu, honey, and water.
  • Heat gently for 10-15 minutes, stirring regularly, until the apples are very tender.
  • Blend lightly to achieve a smooth texture with some chunks. Set aside in the fridge.

3. Cook the pancakes

  • Heat a non-stick skillet and lightly grease it with butter.
  • Pour a ladle of batter into the hot pan and spread it evenly.
  • Cook the pancakes for 1 to 2 minutes on each side until they are golden.
  • Repeat until the dough is exhausted.

4. Garnish and serve

  • Spread a thin layer of yuzu compote on each crepe.
  • Add some fresh raspberries if desired for a fruity and tangy touch.
  • Roll or fold the crepes, then sprinkle with black sesame seeds for a finishing touch.
