Ingredients for 4 people (about 10 pancakes)
Black sesame crepe batter
- 200 g of wheat flour
- 2 tbsp of ground black sesame seeds (or black sesame powder)
- 2 eggs
- 40 cl of milk
- 20 g of melted butter
- 2 tablespoons of sugar
- 1 pinch of salt
Yuzu Compote
- 150 ml of Concentrate to Dilute - The Yuzu Alain Milliat
- 1 apple (peeled and cut into small pieces)
- 2 tbsp of honey or agave syrup
- 1 tbsp water
Preparation
1. Prepare the black sesame crepe batter
- In a mixing bowl, combine the flour, ground black sesame seeds, sugar, and salt.
- Add the eggs, then start mixing.
- Gradually incorporate the milk while whisking to avoid lumps.
- Add the melted butter and mix until you obtain a smooth dough.
- Let the dough rest for 30 minutes for a lighter and fluffier texture.
2. Prepare the Yuzu compote
- In a small saucepan, mix the apple pieces, the Concentrate to Dilute – Yuzu, honey, and water.
- Heat gently for 10-15 minutes, stirring regularly, until the apples are very tender.
- Blend lightly to achieve a smooth texture with some chunks. Set aside in the fridge.
3. Cook the pancakes
- Heat a non-stick skillet and lightly grease it with butter.
- Pour a ladle of batter into the hot pan and spread it evenly.
- Cook the pancakes for 1 to 2 minutes on each side until they are golden.
- Repeat until the dough is exhausted.
4. Garnish and serve
- Spread a thin layer of yuzu compote on each crepe.
- Add some fresh raspberries if desired for a fruity and tangy touch.
- Roll or fold the crepes, then sprinkle with black sesame seeds for a finishing touch.
