The pineapple upside-down cake by Alexia Duchêne

A pineapple upside down cake for the end of year celebrations!

The end of year celebrations are an opportunity to get together with family and friends to share good times. For a delicious and festive dessert, try this pineapple upside down cake. It is super soft and really delicious.

Ingredients : 

  • 170 grams of blond sugar 
  • 225 grams of browned butter 
  • 180 grams of honey 
  • 200 ml buttermilk 
  • 2 whole eggs 
  • 100 grams of brown sugar 
  • 1 vanilla pod 
  • 270 grams of T55 flour 
  • 1/2 teaspoon yeast
  • 1/2 teaspoon baking soda 
  • 20 ml of rum 
  • A pinch of salt 
  • 1 vanilla pod 
  • 1 bottle of Alain Milliat Pineapple Juice 33cl
  • 15 ml of rum 
  • 1 vanilla pod 
  • A teaspoon of cinnamon 
  • A powdered clove 

Steps : 

  1. Butter a mold and place the pineapple pieces in the bottom.
  2. Make a caramel with the blond sugar, pour over the pineapple pieces in the bottom of the mold.
  3. Mix the warm brown butter with the buttermilk, eggs, honey and vanilla.
  4. Add the brown sugar then the flour, vanilla, baking and bicarbonate and a pinch of salt.
  5. Finish with the rum.
  6. Pour over the pineapple and cook at 175 degrees for 1 hour. Check the cooking by inserting a knife into the center.
  7. Meanwhile, reduce the Alain Milliat Pineapple Juice with the vanilla, rum and spices.
  8. Serve the cake with the pineapple sauce.
