Today, we would like to talk a bit more about our Single Variety Grape Juices collection and our partnership with a vineyard in Gaillac (South West region of France)
2020 is the 8th edition with this same vineyard in Gaillac. We use the same grapes as the wine production but before the accurate ripening for vinification, a special harvest is dedicated to us to reach the right balance between sugar and acidity.The use of a winepress maintains the grapes distinctive and individual qualities. This process is what gives our 5 grape juices their unique aromas.
The producer implements increasingly more initiatives to go further in his engagement as a High Environmental Value (HEV) vineyard. It is by communicating, listening to each other that we move forward. The producer was able to activate a so early harvest that we got our best sugar-acidity balance for the Sauvignon since the beginning of our collaboration. An aromatic revelation.
