Our first cider in collaboration with an organic Normandy producer.
The apples, selected when ripe and then pressed, have been fermenting since October 2021.
Then, an assembly in January 2022 and a natural foam setting for several months.

This raw cider with a tense character reveals subtle notes and an assertive bitterness.
Cuvée Juliette is a tribute to Alain’s mother and a nod to her family heritage.
