A light and delicious dessert. Quick and easy to prepare, it combines the creamy sweetness of spread with the lightness of homemade whipped cream. It's the perfect way to round off a dinner or snack.
01Warm the spread slightly in a bain-marie to soften it.
02Separate the egg whites from the yolks. Fold the yolks into the lukewarm batter.
03Whip the very cold cream until stiff peaks form and gently fold it into the mixture.
04Beat the egg whites until stiff, then fold them in gently with a spatula so as not to break them.
05Divide the mousse into individual ramekins or bowls, then refrigerate for 4 hours to set.
06Before serving, add some crushed hazelnuts on top for a crunchy touch.

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
