Ingredients

  • 330 g of farm chicken fillets
  • 2 tbsp soy sauce
  • 60 ml of Cranberry Alain Milliat
  • 28 g maple syrup
  • 10 tarragon leaves
  • Flower of salt
  • Pepper

Préparation

  • 01 Cut the chicken fillets into pieces and marinate them overnight with the juice, syrup and tarragon.
  • 02 Prepare a reduction with the marinade and soy sauce over high then medium heat for ~12 min until thickened.
  • 03 Thread the pieces onto skewers, brown them in a pan in a little oil, then coat them with the sauce and grill them for 5 minutes, turning them over.
  • 04 When serving, add fresh tarragon, fleur de sel and pepper to taste.

Founder of the brand

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
