Craving an elegant, airy, and fruity dessert without spending hours? Passion fruit mousse is a summer classic that combines freshness, lightness, and intensity. At Alain Milliat, we have created a quick-to-prepare version, enhanced by our Dilutable Concentrate – Organic Passion Fruit.

The passion mousse recipe by Alain Milliat

Ingredients (for 6 people)

  • 120 g of Dilutable Concentrate – Organic Passion Fruit Alain Milliat
  • 20 cl of whole liquid cream (30% fat)
  • 50 g of sugar
  • 1 egg white
  • 2 g of food gelatin (1 sheet)

Preparation

  1. Rehydrate the gelatin in a bowl of cold water for 5 to 10 minutes.
  2. Gently heat half of the concentrate (60 g), then off the heat, add the squeezed gelatin. Mix well.
  3. Incorporate the rest of the concentrate (not heated) at room temperature.
  4. Whip the cream to a soft peak. In another bowl, whip the egg white until stiff. Gradually add the sugar.
  5. Once the concentrated mixture + gelatin has cooled, gently fold in the whipped cream, then the beaten egg whites.
  6. Pour into small glasses, and let set in the cold for at least 4 hours.
