Passion fruit in all its forms: the mousse by Alain Milliat

The recipe for passion fruit mousse by Alain Milliat
Ingredients (for 6 people)
- 120 g of Concentrate to Dilute – Organic Passion Fruit Alain Milliat
- 20 cl of whole liquid cream (30% fat)
- 50 g of sugar
- 1 egg white
- 2 g of edible gelatin (1 sheet)
Preparation
- Rehydrate the gelatin in a bowl of cold water for 5 to 10 minutes.
- Gently heat half of the concentrate (60 g), then remove from the heat and add the drained gelatin. Mix well.
- Stir in the remaining (unheated) concentrate at room temperature.
- Whip the cream until soft. In another bowl, whisk the egg white until stiff. Gradually add the sugar.
- Once the concentrated + gelatin mixture has cooled, gently add the whipped cream, then the egg whites.
- Pour into glasses and leave to set in the refrigerator for at least 4 hours.
