Lively and original, this vinaigrette combines the vegetal notes of our Green Tomato Juice with the tangy hint of sherry. It enhances oak leaf cheese, crisp vegetables, or herb burrata.
Ingredients
- 3 tbsp Alain Milliat Green Tomato Juice
- 1 tbsp sherry vinegar
- 9 tbsp green olive oil (fruity)
- 1 bunch of parsley, finely chopped
- Salt
- Pepper
Préparation
- 01 Mix the green tomato juice and vinegar.
- 02 Gradually add the oil, whisking to emulsify.
- 03 Stir in the parsley and season with salt and pepper to taste. Serve on oak leaves garnished with parsley.
