Lively and original, this vinaigrette combines the vegetal notes of our Green Tomato Juice with the tangy hint of sherry. It enhances oak leaf cheese, crisp vegetables, or herb burrata.

Ingredients

  • 3 tbsp Alain Milliat Green Tomato Juice
  • 1 tbsp sherry vinegar
  • 9 tbsp green olive oil (fruity)
  • 1 bunch of parsley, finely chopped
  • Salt
  • Pepper

Préparation

  • 01 Mix the green tomato juice and vinegar.
  • 02 Gradually add the oil, whisking to emulsify.
  • 03 Stir in the parsley and season with salt and pepper to taste. Serve on oak leaves garnished with parsley.

Founder Alain Milliat

Founder of the brand

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
