Ingredients
- 800g of fresh, shelled peas
- 10 cl of Concentrate to Dilute - Yuzu
- 1 L of vegetable broth
- 1 shallot
- A little fresh parsley
- Chive sprigs
- Olive oil
- Salt, pepper
Préparation
- 01 Peel and slice the shallot. Heat a drizzle of oil in a saucepan and fry the shallot. Add the peas and cover with stock and the YUZU. Bring to a boil and simmer for about 20 minutes, until the peas are tender. Season with salt and pepper.
- 02 Drain the peas and blend them, regularly adding cooking stock to obtain a velvety consistency.
- 03 Pour into bowls and sprinkle with fresh chopped parsley, a few pumpkin seeds and a drizzle of olive oil.
