Ingredients

  • 800g of fresh, shelled peas
  • 10 cl of Concentrate to Dilute - Yuzu
  • 1 L of vegetable broth
  • 1 shallot
  • A little fresh parsley
  • Chive sprigs
  • Olive oil
  • Salt, pepper

Préparation

  • 01 Peel and slice the shallot. Heat a drizzle of oil in a saucepan and fry the shallot. Add the peas and cover with stock and the YUZU. Bring to a boil and simmer for about 20 minutes, until the peas are tender. Season with salt and pepper.
  • 02 Drain the peas and blend them, regularly adding cooking stock to obtain a velvety consistency.
  • 03 Pour into bowls and sprinkle with fresh chopped parsley, a few pumpkin seeds and a drizzle of olive oil.

Founder of the brand

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
