Ingredients
- 3 egg yolks
- 80g caster sugar
- 20g cornstarch
- 25cl of Sicilian Late Orange Juice
- 40g of butter
Préparation
- 01 Whisk the egg yolks with the sugar until the mixture whitens. Add the cornstarch and whisk again.
- 02 Gradually dilute with the Sicilian Late Orange Juice.
- 03 Transfer to a saucepan, and cook over medium heat for about 5 minutes, until thickened.
- 04 Off the heat, stir in the diced butter, then cover with cling film.
- 05 Allow to cool to room temperature before use or storage.
