Ingredients

  • 3 egg yolks
  • 80g caster sugar
  • 20g cornstarch
  • 25cl of Sicilian Late Orange Juice
  • 40g of butter

Préparation

  • 01 Whisk the egg yolks with the sugar until the mixture whitens. Add the cornstarch and whisk again.
  • 02 Gradually dilute with the Sicilian Late Orange Juice.
  • 03 Transfer to a saucepan, and cook over medium heat for about 5 minutes, until thickened.
  • 04 Off the heat, stir in the diced butter, then cover with cling film.
  • 05 Allow to cool to room temperature before use or storage.

Founder of the brand

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
