- 3 tbsp of Tardivo di Ciaculli Mandarin Juice
- 9 tbsp rapeseed oil (or other neutral oil)
- Flower of salt
- Pepper
Préparation
- 01 Dissolve the salt in the tangerine juice.
- 02 Gradually add the oil, whisking to emulsify.
- 03 Adjust the seasoning with a turn of the pepper mill. Serve over fresh endives at room temperature (the bitterness softened by the mandarin).
