An iconic summer recipe revisited with our Red Tomato Juice. Ideal for a light starter or a sophisticated aperitif.

Ingredients

  • 1 L of Alain Milliat Red Tomato Juice
  • 1 red pepper (or 2 small)
  • 1 cucumber, peeled and seeded
  • 4 to 5 tablespoons of extra virgin olive oil
  • A few twists of Kampot black pepper (or other)
  • Toasted bread croutons, fresh herbs (optional)

Préparation

  • 01 In a blender, mix the cucumber, the chopped red pepper and the olive oil.
  • 02 Add the Alain Milliat Red Tomato Juice and a few turns of the pepper mill.
  • 03 Blend again. Taste and adjust the seasoning if necessary.
  • 04 Refrigerate for at least 1 hour before serving.
  • 05 Serve chilled, with a few croutons and a drizzle of olive oil.

Founder of the brand

Grandson and son of farmers, a farmer himself, Alain Milliat took over the family farm in Orliénas, near Lyon, in 1983. For 15 years, he restored and planted new plots of land in the traditional way, caring for them like a real garden, incorporating natural methods to better respect the environment. Considering his aesthetic universe somewhat limited, he then imagined another horizon beyond his orchards.
