An iconic summer recipe revisited with our Red Tomato Juice. Ideal for a light starter or a sophisticated aperitif.

Ingredients
- 1 L of Alain Milliat Red Tomato Juice
- 1 red pepper (or 2 small)
- 1 cucumber, peeled and seeded
- 4 to 5 tablespoons of extra virgin olive oil
- A few twists of Kampot black pepper (or other)
- Toasted bread croutons, fresh herbs (optional)
Préparation
- 01 In a blender, mix the cucumber, the chopped red pepper and the olive oil.
- 02 Add the Alain Milliat Red Tomato Juice and a few turns of the pepper mill.
- 03 Blend again. Taste and adjust the seasoning if necessary.
- 04 Refrigerate for at least 1 hour before serving.
- 05 Serve chilled, with a few croutons and a drizzle of olive oil.
